In China, mooncakes are one of the most authentic Mid-Autumn festival dishes. Being both flavorful and fresh on the day of the festival, they are extremely popular. Although this is a lotus mooncake recipe, there are various other fillings, such as red bean, nuts, meat, and more.
Ingredients:
Filling:
- 100 grams of lotus seeds
- 70 grams of sugar
- 50 grams of vegetable oil
- 20 grams of honey
Crust:
- ⅓ teaspoon of water
- 60 grams of vegetable oil
- 250 grams of cake flour
- A large egg
- 150 grams of sugar
Steps:
Filling:
- Put the lotus seeds in a large bowl, and fill the bowl with water
- Let the seeds soak for six to eight hour
- Drain the water and cut each lotus seed in half
- Pour water into a pot, then add the seeds
- Put the pot on the stove, and bring the water to boil over medium to high heat
- Boil for about an hour, or until the lotus seeds are cooked, then drain
- Blend the lotus seeds along with ¾ cup of sugar until smooth (if the paste isn’t smooth, then add a tablespoon of water)
- Add a tablespoon of shortening and two tablespoons of sugar to the pan, then melt it over medium to high heat
- After about 5 minutes, add the lotus to the pot, stir, and cook for six to eight minutes
- Add the remaining shortening to the pan, and combine thoroughly
- Once the filling is a light brown color, turn the heat off and let sit
Crust:
- Put the vegetable oil, sugar, and water in a bowl and mix
- After mixing, add the cake flour and combine thoroughly, then let the dough sit for 45 minutes
- After 45 minutes, preheat the oven to 350 degrees and separate the dough into 12 even pieces
- Place the dough in a refrigerator for 20-30 minutes, then add the lotus paste to the center (optional: place each in a traditional mooncake mold)
- Beat the eggs, then coat each mooncake in a thin layer of egg-wash
- Finally, put the mooncakes on a pan and bake for about 20 minutes

月饼馅:

- 切好以后,把水倒进锅里,然后把荷花籽加进锅里。把锅放在炉子上,然后用中或大火把水烧开。
- 煮一个小时或者荷花籽煮熟以后,把水倒掉。把荷花籽和四分之三杯糖放进碗里,然后用搅拌机拌一拌。如果荷花籽不够软,就可以把一大匙水加进碗里,然后用搅拌机拌一下。
- 把一大匙起酥油和两大匙糖加进锅里,然后用中火把起酥油和糖烧热。大概烧五分钟以后,把荷花加进锅里,拌一下,然后大概烧六到八分钟。
- 把还没加的起酥油放进锅里,拌一拌。如果月饼馅是浅棕色的以后,就好了。
月饼皮:
- 把蔬菜油、糖水和水都放进碗里,拌一拌。把面粉和蛋糕粉加进碗里,拌一下。拌好以后,等四十五分钟,然后面团就好了。
- 先把烤箱开到三百五十度,然后把面团分开。把十二勺面团放在盘子上。把盘子放进冰箱里,然后等二十到三十分钟。
- 等二十到三十分钟以后,把荷花放进面团里。如果要烤最传统的月饼,就可以把面团放进压模里。
- 打蛋,然后把鸡蛋加进碗里,拌一拌。用勺子把一点鸡蛋放在每个月饼上。
- 最后,把月饼放在烤模上,然后把烤模放进烤箱里,大概烤二十分钟就好了!
